Healthy Carrot Pancakes

Carrots aren’t just for salads or stews, they can bring natural sweetness, vibrant color, and a boost of nutrients to your breakfast. These healthy carrot pancakes are light, fluffy, and full of flavor, making them a family favorite.
Ingredients (Serves 4):
1 cup oat flour (or almond flour)
1 tsp baking powder
1 tsp cinnamon
¼ tsp nutmeg
Pinch of salt
1 large egg (or flax egg for vegan)
¾ cup almond milk (or milk of choice)
2 tbsp honey or Monk fruit
1 cup grated carrots
1 tsp vanilla extract
1 tbsp coconut oil (plus more for cooking)
Instructions:
In a bowl, whisk flour, baking powder, cinnamon, nutmeg, and salt.
In another bowl, mix egg, milk, honey, vanilla, and coconut oil.
Add grated carrots to the wet mixture.
Combine wet and dry ingredients, do not overmix.
Heat a non-stick pan with a little coconut oil.
Pour ¼ cup batter for each pancake and cook 2–3 minutes per side.
Serve with Greek yogurt, fresh berries, or extra honey.
Health Tip: Carrots are rich in beta-carotene, which your body turns into vitamin A, helping your skin glow and supporting eye health.
